Sweet Potato Surprise


Here’s a healthy meal that’s quick, easy and contains protein, veggies and an amazing complex carb with a touch of good fat! Not only is it healthy but it’s a delicious yummy for your tummy treat!

All products purchased from Trader Joe’s!

Sauté together in olive oil:
Grilled Chicken strips (4 oz cut up)
Fresh Broccoli florets (approx 1/2 cup, cut up small)
Fresh Spinach (approx 1 cup shredded)
Sprinkle with Balsamic Vinaigrette

Prepare one small to medium sweet potato (cooked)
Cut open in half… Pour chicken sauté mixture in middle of cut sweet potato, add 1/4-1/2 avocado on top with a few dried cranberries (optional) and BAM… One healthy delicious meal!
