Beet & Fennel Salad

beet and fennel saladBeet & Fennel Fourth of July healthy salad!

Ingredients:

Beet

Fennel head

1/4 cup pine nuts

1/2 cup feta

Salt

Pepper

Tarragon

Red wine vinegar

Olive oil

Instructions:

Steam & peel one beet per person

Add olive oil and red wine vinegar and let marinate in refrigerator

1 head of fennel chopped and sauteed with light oil

Toast the pine nuts separately

Toss all ingredients in bowl

Add salt and pepper

Add feta cheese and tarragon

Enjoy!!!
